Tomato, eggplant, and avocado burger

Ingredients for 4 servings:

  • 1 eggplant(s)
  • olive oil
  • 2 large tomatoes
  • 1 avocado(s), ripe
  • 1 garlic clove(s)
  • 100 g yogurt
  • 3 tbsp mayonnaise
  • 1 dashes Tabasco, green
  • Salt and pepper, black
  • some lettuce leaves for topping
  • 4 burger buns, alternatively wholemeal buns or baguette buns

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash the eggplant, slice lengthwise, and fry in hot oil until golden brown on both sides. Meanwhile, halve the buns. Cut the tomatoes and peeled avocado into thick slices and season lightly with salt. Crush or finely chop the garlic and mix with yogurt, mayonnaise, Tabasco, salt, and pepper until smooth. Spread this mixture on both buns. Top the bottom half with lettuce, then two slices each of eggplant, avocado, and tomato, and cover with the top half of the bun. If desired, secure the burgers with wooden skewers. This recipe can be varied, for example, with fried giant mushroom slices or grilled zucchini slices.
