Cashew horseradish spread

Ingredients for 4 servings:

  • 250 g cashew nuts
  • 150 g horseradish, freshly grated
  • 125 g butter (soft)
  • 1 dash of lemon juice
  • e.g. salt and pepper
  • Garlic

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Place the cashews in a pot and pour boiling water over them, then let them steep for 2 hours. Drain the water and puree the nuts. Cream the butter in a bowl and mix with the cashew puree and horseradish. Season with salt, pepper, lemon juice, and garlic. It goes perfectly with fresh bread, as a small appetizer, or as a snack between meals.
