vegetarian, affordable and always without tendons

Peel the swede and cut into approximately 1 cm thick slices. Place in boiling salted water and cook for approximately 10 minutes, until the slices are tender. Meanwhile, have three plates ready: one with flour, one with beaten eggs, and one with breadcrumbs, salt, and pepper. Remove the slices and let them cool briefly. Then coat them first in flour, then egg, then seasoned breadcrumbs, and if you like, again in egg and breadcrumbs. Place the slices in a pan with hot oil and fry until golden brown on both sides. They taste particularly good if you top the slices with thin strips of feta cheese after the first turn, which will then melt under the closed lid. Serve with mashed potatoes or chips and salad.
