Cauliflower meatballs

Ingredients for 4 servings:

  • 160 g cauliflower, grated
  • 55 g mozzarella, grated
  • 25 g Parmesan, grated
  • 55 g Cheddar cheese, grated
  • 3 large eggs
  • 1 ½ tbsp chives
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • salt and pepper
  • 1 tbsp butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 36 minutes

low-carb, gluten-free

In a bowl, mix the cauliflower with the cheese, eggs, chives, and other seasonings. Form the mixture into small round patties. Heat the butter in a frying pan over medium heat. Fry the patties for 3-4 minutes, then flip and fry for another 1-2 minutes. These patties can be served with sour cream and cooked shrimp, for example.
