Ingredients for 1 servings:

  • e.g. sweet potato(s)
  • n. B. root vegetables, e.g. carrots and parsnips
  • n. B. beetroot
  • n. B. Swede(s)
  • some oil
  • salt and pepper
  • Thyme, shredded

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C (top/bottom heat). Peel and wash the vegetables (varieties and quantities as desired), then cut into finger-thick sticks. Blanch in hot water for about 2 minutes, rinse, and pat dry. Always blanch the beets separately at the end to prevent them from discoloring the other vegetables. Toss with the oil and thyme and season with salt and pepper. Spread on a baking sheet lined with baking paper and bake in the oven for about 30 minutes until golden brown, turning halfway through. Towards the end of the baking time, increase the temperature to 220°C (425°F) and let the fries brown. Ketchup goes well with the fries.
