Ingredients for 4 servings:

  • 500 g tomatoes
  • 100 g dates
  • 1 m.-sized onion(s)
  • 1 chili pepper(s)
  • 1 tbsp honey
  • 50 ml apple cider vinegar
  • 1 piece(s) cinnamon stick(s) (cinnamon bark)
  • 5 juniper berries
  • 1 tsp mustard seeds
  • 1 tsp salt
  • 1 tsp pepper

First, peel the tomatoes. To do this, wash the tomatoes, halve them, and remove the stems. Then place the tomatoes cut-side down in an ovenproof dish. Place the dish in the oven under the broiler until the tomato skins have turned slightly black. In the meantime, dice the onion and sauté in a pan until translucent, caramelize with the honey, and deglaze with the vinegar. Remove the tomatoes from the oven, let them cool slightly, and peel them. Now chop the dates, chili pepper, and tomatoes and add them to the dish with the remaining ingredients. Place everything in the oven and bake at 180°C (top/bottom heat) for about 45 minutes, stirring occasionally. The cinnamon bark and juniper berries can be removed from the mixture. Finally, puree everything and season to taste. The ketchup will keep in the refrigerator for up to a year. Tips: If you don’t want to skin the tomatoes, you can also prepare everything in a pot or pan. You can play with the spices and refine the ketchup to your taste.
