Ingredients for 10 servings:
- 1 ½ kg red pepper(s).
- 1 ½ kg green bell pepper(s)
- 1 ½ kg onion(s), finely chopped
- 4 cup(s) vinegar (white wine vinegar)
- ½ cup(s) sugar
- 1 tsp mustard seeds (per jar)
- 2 tsp salt
Instructions
Working time approx. 50 minutes; Total time approx. 50 minutes
Peel and deseed the bell peppers. Finely chop all vegetables using a food processor or by hand, but do not puree. Cover with boiling water, let stand for 15 minutes, and drain. Add the remaining ingredients, bring to a boil, and simmer for about 10 minutes, stirring occasionally. Transfer the relish to screw-top jars and sterilize.
