Zucchini Pizza Bites

Ingredients for 4 servings:

  • 4 tbsp tomato paste
  • 3 tbsp water
  • salt and pepper
  • ½ tsp oregano
  • ½ small onion(s), chopped
  • 2 garlic cloves, chopped
  • 1 m.-large zucchini
  • n. B. Cheese, finely grated (e.g. Parmesan or Gouda)
  • n. B. Cocktail tomatoes, sliced
  • e.g. oregano
  • e.g. olive oil for frying the zucchini

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Party snack

For the tomato sauce, simply mix the tomato paste with the other ingredients and set aside. Wash the zucchini and cut into slices about ½ cm thick. Brown the slices in a little olive oil for about 1 minute on each side. Place the slices on a baking sheet lined with baking paper and spread with the prepared tomato sauce. Add the cheese, tomato slices, and dried oregano, and bake the tray in a preheated oven at 200°C (top/bottom heat) for about 5-6 minutes. The little zucchini pizza bites are ready. They taste great both hot and cold.
