Ingredients for 3 servings:

  • 1 large beetroot
  • 1 onion(s)
  • 2 balls of mozzarella
  • 500 g gnocchi from the refrigerated counter
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the onion and slice into half rings. Peel and grate the beetroot. Brown the sliced ​​onions in a pan. Add the grated beetroot to the pan and sauté with the onions for a few minutes. Add the gnocchi and cook briefly. Finely slice or grate the mozzarella and add it to the pan. Stir well until the cheese is nicely stringy. Finally, season with salt, pepper, and paprika to taste. Tips: Some of the beetroot can be replaced with carrots. Mozzarella can be substituted with grated Gouda.
