- 1 sweet potato(s)
- 6 small cherry tomatoes
- 1 zucchini
- 1 cup mini mozzarella
- 2 tsp rosemary
- salt and pepper
- olive oil
- Balsamic vinegar, dark

First, peel the sweet potato and cut it into 1-2 cm pieces. Cover them with water and boil for about 5-10 minutes, depending on their size. Wash the zucchini and tomatoes thoroughly. Slice the zucchini. Then quarter both. Roast the zucchini in a pan for about 5 minutes. Drain the mozzarella and rinse it briefly. Finally, place each ingredient in a corner of a bowl and season with salt, pepper, rosemary, oil, and vinegar.
