Ingredients for 1 servings:

  • 30 g oat flakes, wholegrain, fine or other cereal flakes
  • 15 g dates, raisins, figs or cranberries
  • 5 g almonds or nuts of your choice
  • 200 g carrot(s)
  • 100 ml orange juice, freshly squeezed, direct juice, etc.

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 15 minutes

overnight

Place the oat flakes in a sealable container (screw-top jar, bowl, or similar, large enough), along with the chopped dates and whole almonds (you can also chop them if you like). Pour over the orange juice. Sprinkle with grated carrots. Refrigerate overnight. Stir thoroughly before serving and enjoy. You can also add sliced banana, grated apple, orange segments, etc. I got the idea when I harvested about 5 kg of carrots before the first frost. I grated them and froze them – but now they have to go so I have room in the freezer again. 280 kcal per serving.
