Ingredients for 4 servings:
- 1 kg pork neck, cut into approx. 2 x 2 cm cubes
- 2 onions, hot or mild
- 2 bell peppers
- ½ tsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 2 tbsp tomatoes, pureed
- 1 bay leaf
- 1 tsp spice(s) (barbecue seasoning)
- 1 tsp cayenne pepper
- salt and pepper
Instructions
Working time approx. 20 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 15 minutes; Total time approx. 6 hours 35 minutes
Quick and tasty for the grill or smoker
Cut the meat into cubes approximately 2 x 2 cm in size, unless you’ve had it butchered. Combine the marinade ingredients (see list) and mix with the meat. Let the meat stand in the refrigerator for at least six hours, ideally overnight. Stir a few times during the marinade. Thread the marinated meat, onion, and peppers tightly onto wooden skewers. Grill or cook in a pan or on the grill for about 15 minutes. Soak the wooden skewers in water for at least 30 minutes beforehand so they won’t stick to the meat as much.
