Chickpea puree with tomato sauce

Ingredients for 1 servings:

  • 1 can chickpeas, 240 g drained
  • 2 tsp olive oil
  • 1 pinch(s) anise, ground
  • 1 pinch of caraway seeds
  • ½ tsp cinnamon
  • ½ tsp sugar
  • Salt
  • 1 can tomato(s), (Pizza tomatoes), chunky
  • 1 clove(s) garlic, pressed
  • 2 tsp parsley, chopped, dried or frozen
  • Parsley, chopped, dried or frozen

Instructions

Working time approx. 3 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 13 minutes

Place the chickpeas in a small saucepan and heat with 1 teaspoon of the oil, the mixed spices, cinnamon, sugar, and salt. Once warm, transfer them from the pan to another container and reuse the pan to heat the pizza tomatoes along with the second teaspoon of oil, the garlic, and the parsley. Meanwhile, puree the chickpeas with a hand blender, season to taste, and transfer to a plate. Finally, season the tomato sauce and pour it over the top.
