Ingredients for 4 servings:

  • 2 cucumbers, peeled and cut into half slices 1cm thick
  • 2 red bell peppers, diced
  • 2 onions, diced
  • 1 gr. can/n kidney beans, rinsed
  • ½ cup(s) red wine vinegar
  • 2 tbsp sugar
  • Salt, to taste
  • 1 tsp mustard
  • 3 tbsp oil
  • 1 bunch parsley, finely chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cucumbers, kidney beans and peppers with delicious dressing

Combine the dressing ingredients and mix with the other ingredients. Chill for 1 hour and season again to taste. It goes with almost anything; we think it tastes especially good with grilled food. Tip: Add 1 diced sausage and serve with bread.
