Carrot – Apple – Pepper Salad

Ingredients for 4 servings:

  • 2 bell peppers, red
  • 4 carrots
  • 2 small apples
  • 1 can of tangerine(s)
  • 3 tbsp natural yogurt
  • 1 tbsp mayonnaise
  • 1 dash of cream
  • 1 pinch of salt
  • 1 pinch(s) of pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Deseed the bell peppers and remove the white pith, then finely slice or grate them and place them in a bowl. Peel the carrots and wash or peel the apples. Grate both into the bell pepper strips. Add the whole can of mandarin oranges and their juice. Mix the remaining ingredients together in a small bowl and add to the salad. Let the salad sit for about 2 hours before serving – then it’s perfect.
