Ingredients for 2 servings:
- 2 m.-sized eggs
- 100 g cottage cheese or cream cheese or quark
- 2 tbsp spelt flour
- 2 mushrooms
- 1 large tomato(s)
- 2 spring onions
- salt and pepper
- 1 banana(s)
- 1 handful of berries
- e.g. maple syrup or honey
Instructions
Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Whisk the eggs with the cottage cheese (cream cheese, quark) and flour. Chop the vegetables or fruit into small pieces. For the savory version, add the vegetables, salt, and pepper to the batter. Mix everything together and let it rest for 5 minutes. Heat a non-stick pan and pour in the batter. Fry the pancakes for about 2 minutes on each side and serve with a small salad and yogurt. Repeat for the sweet version. If you need something sweeter, add a little maple syrup or honey. Tips: You can also fry ham or sausage for savory pancakes. I’ve also stirred shallots into the batter.
