Avocado mashed potatoes

Ingredients for 4 servings:

  • 8 potatoes, floury
  • 1 large avocado(s), ripe
  • 2 spring onions
  • 1 bunch of parsley
  • 1 chili pepper(s)
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel and dice the potatoes, and boil them in water until tender. Meanwhile, slice the spring onions and chili pepper into small rings. Finely chop the parsley. Halve the avocado, remove the pit, and scoop out the flesh with a spoon. When the potatoes are tender (use a knife to test), drain the water, reserving 1 cup. Next, add the avocado to the potatoes and mash everything into a mash. If the mixture is too thick, add a little of the potato water. Season the mash with salt and pepper and add the spring onions, chili pepper, and parsley. The mash is ready and ready to serve. The mashed potatoes go well with salad, fish, baked cheese, and much more. Tips: Feel free to experiment with this mash to your liking. Garlic, for example, goes really well with potatoes and avocado. You can use other herbs instead of parsley. A dash of lemon also adds a special touch to the dish.
