Onion cake or vegetable cake

Ingredients for 1 servings:

  • 700 g onion(s) or other vegetables
  • 500 g yogurt, 1.5% fat
  • 4 large eggs
  • 250 g cheese (Edam), grated
  • 1 pack of puff pastry, fresh or frozen
  • Salt
  • pepper
  • Paprika powder, sweet
  • nutmeg
  • Caraway powder
  • 100 g butter
  • 125 g ham, diced

Working time approx. 20 minutes; Total time approx. 20 minutes

light and thin version

Preheat oven (180°C fan/convection oven). Prepare the puff pastry according to the package instructions and spread or roll it out on a baking sheet and let it rest. Dice the onions and sauté in butter and a little salt until translucent. Add the diced ham and cook for 5 minutes. Meanwhile, whisk the yogurt and eggs in a large bowl, season generously with salt, pepper, and paprika, and season with a little nutmeg and caraway. Fold in the cooled onions and stir in the grated cheese. Pour the mixture onto the puff pastry and spread it out. Bake in the oven for about 20-30 minutes. Prick with a fork if desired. Let cool slightly and serve – best with a fresh white wine. Carrots and leeks also taste very good instead of onions; eggplant and zucchini would make a Mediterranean variation.
