Fried zucchini with caramelized onions

Ingredients for 4 servings:

  • 2 zucchinis
  • 4 onions
  • oil
  • Salt
  • Basil, fresh
  • Balsamic vinegar
  • Sugar
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Wash the zucchini and cut into 1cm-thick slices. Brown them in oil on both sides, remove, and set aside. Slice the onions into rings and fry them in the same oil. Sprinkle with sugar, let them caramelize, and deglaze with balsamic vinegar. Add the onion rings and liquid to the zucchini, season with salt and pepper. Add a few basil leaves, cover, and let stand in the refrigerator for a few hours. A delicious side dish for grilled food or as an appetizer.
