Iced strawberry and melon gazpacho

Ingredients for 2 servings:

  • 1 small watermelon(s)
  • 150 g strawberries
  • 1 pear(s) (Williams Christ)
  • 2 cm ginger root
  • 10 ice cubes
  • 6 sprigs of mint
  • pepper
  • e.g. sugar or sweetener
  • e.g. lemon juice

Working time approx. 10 minutes; Total time approx. 10 minutes

Strawberry-melon cold soup with mint and pepper in a half melon

Halve the watermelon and scoop out the flesh, leaving a soup bowl. Remove the greens from the strawberries, peel the ginger, core the pear, and cut it into eighths. Combine everything with about 1/3 of the melon and the remaining ingredients in a powerful blender capable of crushing ice cubes. Blend everything until finely chopped and fill the melon bowls. I use liquid sweetener, but you can also use sugar or no sugar at all, depending on your taste.
