Broccoli cold soup

Ingredients for 2 servings:

  • 150 g organic broccoli
  • 1 small carrot(s), organic
  • 300 ml water or a little more
  • 1 small banana(s)
  • ½ lemon(s), juice
  • 2 dashes soy sauce
  • 1 pinch of nutmeg
  • 6 cherry tomatoes, halved
  • 2 tbsp, heaped pine nuts, roasted, alternatively sliced ​​almonds
  • 1 tbsp pumpkin seed oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

hearty and vegan

Wash and chop the broccoli and carrot. Place the water and banana in a blender, then add the chopped vegetables. Add the lemon juice and seasonings. If it becomes too thick while blending, add more water. Divide the cold soup between two soup bowls. Garnish with the halved cherry tomatoes and toasted nuts. Finally, drizzle with pumpkin seed oil for decoration. Very healthy and refreshing in summer.
