Mayonnaise for lazy people

Ingredients for 4 servings:

  • 1 egg(s), super fresh
  • 200 ml oil, neutral (e.g. safflower oil, sunflower oil, rapeseed oil – not olive oil, otherwise it will be bitter)
  • 1 pinch of salt
  • 1 tbsp mustard (Dijon)
  • 1 tbsp lemon juice

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

A bit unorthodox, but it always works!

Place the whole egg in a bowl with mustard, oil, and salt and blend with an immersion blender until spreadable (only takes a few seconds). Season to taste with pepper and lemon juice. It always turns out well and tastes great with salads or, for example, with tuna, parsley, and capers as a spread. It will keep for about 24 hours if refrigerated. Tip: If the mayonnaise is too runny, simply add a little more oil.
