Ingredients for 4 servings:
- 1 egg(s), super fresh
- 200 ml oil, neutral (e.g. safflower oil, sunflower oil, rapeseed oil – not olive oil, otherwise it will be bitter)
- 1 pinch of salt
- 1 tbsp mustard (Dijon)
- 1 tbsp lemon juice

A bit unorthodox, but it always works!
Place the whole egg in a bowl with mustard, oil, and salt and blend with an immersion blender until spreadable (only takes a few seconds). Season to taste with pepper and lemon juice. It always turns out well and tastes great with salads or, for example, with tuna, parsley, and capers as a spread. It will keep for about 24 hours if refrigerated. Tip: If the mayonnaise is too runny, simply add a little more oil.
