Ingredients for 4 servings:
- 1 kg waxy potatoes
- 1 onion(s)
- 125 ml meat broth, hot
- 125 g bacon, streaky
- 6 tbsp white wine vinegar
- 2 tbsp oil
- 1 pinch(s) of sugar
- pepper, black
- Salt
- ½ bunch parsley
- ½ bunch of dill
- ½ bunch chives
Instructions
Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes
Boil the potatoes as usual, then peel them. Slice them while still warm. Place them in a bowl and keep warm in a hot water bath. Pour over the vinegar and meat broth. Peel and finely chop the onion and add it to the potatoes. Dice the bacon. Heat oil in a pan and fry the bacon until golden brown. Season with salt, pepper, and sugar. Then pour the hot bacon sauce over the potatoes. Mix carefully. Let the salad marinate in the hot water bath for about 20 minutes. In the meantime, wash the herbs, pat dry, and chop them. Sprinkle over the salad before serving.
