Grandma's potato salad

Ingredients for 4 servings:

  • 1 kg potatoes
  • salt and pepper
  • 1 tsp caraway seeds
  • 1 large onion(s)
  • 1 apple, sour
  • 2 gherkins
  • 1 bunch of chives
  • ½ bunch of dill
  • 4 tbsp meat broth, concentrated
  • 3 tbsp wine vinegar
  • 2 eggs
  • 1 tsp mustard, hot
  • 1 tbsp mayonnaise
  • 4 tbsp oil
  • 1 tsp sugar
  • ½ bunch parsley
  • 7 slice(s) smoked bacon

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Boil the potatoes in their skins in salted water with caraway seeds. Rinse briefly, peel, and slice. Finely dice the onion, peeled apple, and gherkins. Chop the chives and dill. Mix the meat broth, mustard, sugar, vinegar, and oil. Add the herbs, apple, onion, and gherkins to the potatoes. Stir in the mayonnaise. Garnish the salad with parsley, cucumber slices, and bacon rolls.
