Whole grain bread with maple syrup

Ingredients for 1 servings:

  • 450 ml buttermilk
  • 100 ml maple syrup
  • ½ tsp baking soda
  • 410 g rye flour
  • 100 g whole wheat flour
  • 100 g walnuts, very coarsely chopped
  • 2 tbsp, heaped oat flakes
  • 2 tbsp, heaped flaxseed
  • 2 tbsp, heaped sunflower seeds
  • 2 tbsp, heaped chia seeds
  • 1 tbsp, heaped sesame seeds, light
  • 1 tbsp, heaped sesame, black
  • 1 tsp salt
  • 1 bag of cream of tartar baking powder
  • Flour for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Whisk together the buttermilk, maple syrup, and baking soda. Combine all the other ingredients in a bowl. Add the buttermilk and mix everything with a wooden spoon until a dough forms. The dough will be very sticky, but that’s okay. Line a 30cm loaf pan with parchment paper. Pour in the batter, making sure there are no air pockets. Dust with a little flour and press it back into the pan with your hand. Bake in the oven at 180°C (top/bottom heat) for 60 minutes. Then remove from the pan and let cool on a wire rack.
