Avocado – chicory – orange – salad

Ingredients for 2 servings:

  • 1 small avocado(s)
  • 2 chicory
  • 1 orange(s)
  • 3 tbsp lemon juice
  • 1 tsp mustard
  • 2 tsp oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Remove the stem from the chicory and arrange the outer leaves in a star shape on plates. Cut the remaining leaves into coarse strips. Peel the avocado, halve it, and scoop out the pit. Cut the flesh into thin slices and immediately drizzle with lemon juice to prevent it from browning. Peel the orange and cut out the segments, reserving any juice. Arrange the avocado slices and orange segments on the chicory leaves and sprinkle with the chicory strips. Mix the lemon and orange juice with the mustard, salt, pepper, and oil, season to taste, and drizzle over the salad. Serve with fresh baguette.
