Ingredients for 1 servings:

  • 245 g oat flakes or spelt flakes or similar
  • ½ pack of baking powder
  • 4 banana(s), ripe
  • 230 g date(s), pitted
  • 250 ml plant milk (plant drink)
  • 1 apple

A stand mixer is recommended for preparing this recipe. Preheat oven to 180°C fan/convection oven. Grind the oats into flour in a stand mixer and place in a bowl. Add the baking powder, stir in the dry mixture, and set aside. Now add the bananas, dates, and plant-based milk to the mixer and mix until thick. Pour the liquid banana mixture into the oat flour mixture and stir thoroughly. Pour the batter into a lined loaf pan. Slice the apple and fan them out over the surface. Bake the cake in the preheated oven for 1 hour 20 minutes. Let the cake cool and refrigerate. Tip: Optionally, you can add cinnamon, nuts, etc. to the batter before baking. The sky’s the limit.
