Banana coconut muffins

Ingredients for 1 servings:

  • 2 bananas, ripe
  • 2 tbsp, heaped cocoa powder, kinako or matcha powder
  • 2 tbsp coconut butter

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Makes 6 muffins; simple and healthy with only 3 ingredients; clean eating, vegan, Paleo

Mash the bananas in a bowl with a fork. Add cocoa powder, kinako, or matcha powder, if desired, and mix in. You may want to warm the coconut butter a little in the microwave beforehand, then add it and mix everything together until smooth. Pour the batter into 6 muffin cups and bake in a preheated oven at 180°C (350°F) for 20 minutes. Let cool and store in the refrigerator.
