White beans with tomatoes and sage

Ingredients for 4 servings:

  • 500 g white beans
  • 5 tbsp olive oil
  • 4 large sage leaves
  • 400 g tomatoes, peeled
  • 1 m.-sized onion(s)
  • 2 garlic cloves
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 1 day 2 hours 45 minutes

Soak the beans for about 24 hours, using about 1-1.5 liters of water per 300g of beans. Cook the beans in the soaking water for about 1-1.5 hours. Strain and rinse the beans. Dice the onion and garlic and fry in the oil until golden brown. Chop the sage and add to the onions and garlic. Strain the tomatoes, add them, and reduce everything. Add the sauce to the beans and stir in loosely. Cook everything at a low heat for about 30 minutes. Serve with salsicce (coarse sausages) and toasted garlic bread or rice.
