White Mediterranean beans

Ingredients for 4 servings:

  • 500 g beans, white, medium
  • 1 vegetable onion(s), diced
  • 2 cloves garlic (or more), diced
  • 5 tbsp olive oil, good
  • 5 sage leaves, finely chopped
  • 4 tbsp tomato paste
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 1 hour 50 minutes; Total time approx. 10 hours

Soak the beans overnight and then cook until tender (takes about 1-1.5 hours). Then pour them into a sieve and rinse. Sauté the diced onion and garlic in the oil until golden brown and add the finely chopped sage. Pour everything into a pan and stir gently until the beans have absorbed the fat. Finally, stir in the tomato paste and season generously. Serve with fresh bread or rice.
