Peas with apple in coconut sauce

Ingredients for 1 servings:

  • 150 g peas
  • 1 m.-sized apple
  • 1 small onion(s)
  • 200 ml coconut milk
  • 1 shot of carrot juice
  • 1 tbsp rapeseed oil or other
  • some water if needed

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Peel the onion and skin the apple, then dice both. Fry the onion in a pan with the oil. Add the apple and continue frying briefly, then deglaze with the coconut milk. Add the peas, a splash of carrot juice, and, depending on the consistency, a little more water. Cook until the peas are cooked through (takes about 10-15 minutes on a higher heat). Tips: Vary the amount of peas as needed. Can be eaten as a side dish (in the picture with fried eggplant) or as a main course. Fresh peas are in season in summer, but frozen peas will work year-round.
