Vanilla coconut pudding

Ingredients for 4 servings:

  • 500 ml coconut milk
  • 3 tbsp sugar
  • 1 bag(s) of vanilla pudding powder
  • some desiccated coconut

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 15 minutes

Take 5 tablespoons of the coconut milk and mix it with the sugar and vanilla pudding powder. Heat the remaining milk. When the milk boils, remove from the heat and whisk in the powder. Bring back to a boil briefly. Then let it cool and pour into a dessert bowl. Refrigerate for about 2 hours to set. Sprinkle with desiccated coconut before serving.
