Spicy potato waffles with dip

Ingredients for 1 servings:

  • 500 g jacket potatoes
  • 75 g margarine
  • 3 eggs
  • 250 g quark, low-fat
  • 100 g flour (wholemeal flour)
  • 1 bunch of basil
  • 100 g sour cream
  • 125 g yogurt
  • 1 tbsp tomato paste
  • salt and pepper
  • Paprika powder

Working time approx. 30 minutes; Total time approx. 30 minutes

makes 8 waffles

For the waffles, mash the potatoes and let cool. Beat the eggs with the margarine until frothy. Add the quark, flour, and mashed potatoes, season with salt and pepper, and knead into a smooth batter. Grease the waffle iron with margarine and place 3-5 basil leaves on the bottom. Pour in a large spoonful of batter, smooth it out, and place another 3-5 basil leaves on top of the batter. Bake the waffles in the closed waffle iron until golden brown. This amount makes eight waffles. For the dip, mix the sour cream, yogurt, and tomato paste well and season with pepper, salt, and paprika. Serve with the waffles in a small bowl.
