The following instructions are for a rectangular Belgian waffle iron, which will produce two waffles. If you are making the croquette waffle with a round waffle iron, or if you are only making a single waffle, divide the remaining ingredients equally between each waffle iron. Preheat the waffle iron. As soon as it is ready, place the croquettes on the waffle iron and press the lid down firmly. Toast the croquettes until the croquette waffle is browned. Spread 1 tablespoon of cream cheese on each waffle and sprinkle with a little herb salt and dill. Place 4 cucumber slices on each waffle iron. Spread 1 teaspoon of horseradish on each cucumber, followed by a slice of smoked salmon. Finally, sprinkle the salmon with sliced spring onions or cress. Serve the waffles while still warm.
