Fake tarte flambée vegan style

Ingredients for 1 servings:

  • 1 roll (to taste dough, vegan, approx. 275 g
  • 95 g basil pesto, vegan
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 1 handful of cherry tomatoes
  • salt and pepper
  • 75 g cheese substitute, grated, vegan
  • 1 bunch arugula, optional
  • some olive oil for drizzling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C (top/bottom heat). Spread the puff pastry on a baking sheet (the puff pastry usually comes with baking paper, otherwise, line the baking paper first and then spread the puff pastry on it). Spread the pesto evenly over the puff pastry. (You can use more or less pesto depending on your taste, but this amount is perfect for me.) Chop the onion and garlic clove into small pieces, quarter the cherry tomatoes, and spread everything on the puff pastry. Season with salt and pepper and sprinkle the vegan grated cheese over the puff pastry. Bake in the preheated oven on the middle rack for about 20 minutes, until the puff pastry has risen nicely. Once the “fake tarte flambée” is ready, you can top it with arugula and drizzle with a little olive oil.
