Vegan Low Carb Spinach Pancakes

Ingredients for 3 servings:

  • 300 ml water
  • 100 g chickpea flour
  • 1 tbsp flaxseed
  • 1 tsp salt and pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 pinch of nutmeg
  • 2 handfuls of baby leaf spinach

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Combine all ingredients in a blender and mix thoroughly. Let the batter rest for at least 10 minutes. Heat a little oil in a pan and cook 3 pancakes one after the other.
