Ingredients for 1 servings:
- 3 kg zucchini
- 1 kg onion(s)
- 2 bell peppers, red and yellow
- 3 cups white wine vinegar
- 3 cups sugar
- 2 ½ tbsp mustard seeds

Cut the zucchini, onion, and bell pepper into bite-sized pieces. Add the wine vinegar, sugar, and mustard seeds and let it steep for half a day. Then bring the mixture to a boil in a saucepan. Transfer the mixture to clean screw-top jars and turn the sealed jars upside down for at least 10-15 minutes.
