Ingredients for 5 servings:
- 125 g tapioca pearls
- 1 liter of water
- 1 pinch of salt
- 200 ml coconut milk, sweetened
- 200 ml soy milk (soy drink), sweetened
Instructions
Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes
Vegan
Let the tapioca rest in a bowl with half a liter of water for ten minutes. Add the remaining water and salt and heat. Cook over low heat for 10 to 15 minutes. If the mixture becomes too thick, add more water. The tapioca pearls will now be mostly transparent. Let the mixture cool for about 20 minutes so that even the last pearls become soft and transparent. To make the milky-sweet soup with tapioca pearls, add the cooked tapioca pearls to sweetened coconut milk or sweetened soy milk.
