Green beans with pine nuts

Ingredients for 8 servings:

  • 2 tbsp olive oil
  • 50 g pine nuts
  • 1 tsp paprika powder
  • 500 g beans, green
  • 1 small onion(s), finely chopped
  • 1 garlic clove(s), finely chopped
  • ½ lemon(s), juice
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Tapas, delicious side dish, quickly prepared

Heat the olive oil in a pan. Toast the pine nuts for 1 minute, stirring constantly, until golden brown. Remove with a slotted spoon, drain well on kitchen paper, and place in a bowl. Reserve the oil in the pan! Add the paprika to the pine nuts and mix well. Set aside. Trim the beans, place them in a pot, and pour boiling water over them. Bring back to a boil and simmer for 10 minutes until al dente. Drain well in a colander. Heat the oil in the pan again. Sauté the onion for 5-10 minutes until translucent and lightly browned. Add the garlic and fry for 30 seconds. Add the beans to the pan and heat for 2-3 minutes, stirring constantly. Season with salt and pepper. Empty the contents of the pan onto a preheated plate. Drizzle with lemon juice and stir. Sprinkle with the toasted pine nuts and serve hot.
