Ingredients for 6 servings:

  • 400 g mashed potatoes, cooled, possibly from the day before
  • 200 g feta cheese
  • 2 large eggs
  • 50 g Parmesan
  • 1 clove(s) garlic
  • Herbs, of your choice, chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

with mashed potatoes

Whisk together the puree, crumbled feta, eggs, Parmesan cheese, and crushed garlic and season to taste. Pour into well-greased muffin cups. Bake at 200°C for about 40 minutes, depending on your oven. This batch makes about 6-8 muffins. The muffins can be varied as desired. You can add ham, salami, diced bell peppers, paprika, sun-dried tomatoes, olives, etc.
