Kohlrabi waffles

Ingredients for 4 servings:

  • 3 kohlrabi
  • 3 m.-large potatoes, floury
  • 1 clove(s) garlic clove(s)
  • 1 onion(s)
  • 100 g grated cheese (Emmental, Gruyère, etc.)
  • n. B. Lemon juice, amount according to taste
  • 2 large eggs
  • 100 g flour
  • Salt and pepper from the mill
  • Cayenne pepper
  • Clarified butter or oil for baking

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

If you don’t have a waffle iron, bake the dough like potato pancakes in a pan

Finely chop the tender inner kohlrabi leaves. Clean and finely grate the kohlrabi, potatoes, onion, and garlic. Then mix everything with the flour, beaten eggs, cheese, and lemon juice. Season the batter with salt, pepper, and cayenne pepper. Before baking, generously grease the baking surfaces of the waffle iron, add about 2 tablespoons of waffle batter, and bake each waffle for about 5 minutes. Serve hot, straight from the waffle iron.
