Ingredients for 1 servings:
- 300 g rolls (lye rolls) from the previous day
- 100 g cream
- 100 ml milk
- 50 g cheese (Emmental), grated
- 2 eggs
- some pepper
- some chives, finely chopped
- some parsley, finely chopped
- little salt
- possibly breadcrumbs
- cheese, if desired, for sprinkling

savory muffins made from pretzel rolls – makes about 10 pieces
Cut/tear the pretzel rolls into small pieces and place them in a bowl. Heat the cream and milk in a saucepan or in the microwave, pour over the bread pieces and let stand for 10 minutes. In the meantime, preheat the oven to 190°C and line a muffin tin with paper cases. Separate the eggs, add the egg yolks, cheese, pepper, herbs and a little salt to the roll mixture. Knead the mixture well, adding a little breadcrumbs or milk if necessary to achieve a dough that is easy to knead. Beat the egg whites until semi-stiff to stiff peaks and add them to the mixture. Shape each into small balls and press them into the muffin tin. Bake in the oven for approx. 15-25 minutes, let stand for 5 minutes and then serve either warm or cold. Tip: Top the muffins with cheese before baking.
