Ingredients for 2 servings:
- 1 m.-sized carrot(s)
- 1 celery stick
- 1 apple, sweeter
- Salt
- Vinegar
- oil
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Remove the long, tough fibers from about half of the celery stalks (if present) and cut into approximately 2 mm thick pieces. Feel free to finely chop the celery leaves. Peel the carrot and slice or slice into 2-3 mm thick sticks. Core the apple and also cut it into 2-3 mm large and 1 mm thick pieces. Place everything in a bowl and mix well. Add salt, vinegar, and oil (I use a mild herb vinegar and a not-too-nutty rapeseed oil). Let it sit for at least 30 minutes, seasoning with more salt and/or vinegar if desired. Note: This is also perfect for meal prepping for the next day.
