Oriental fruit rice

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tbsp oil
  • 200 g Basmati rice
  • 500 ml vegetable stock
  • 125 g mixed dried fruits (apples, prunes, raisins, etc.)
  • 40 g cashew nuts
  • ½ bunch coriander leaves
  • 1 pinch of cinnamon
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the onion and garlic and fry in oil until translucent. Add the rice and vegetable stock, bring to a boil, and simmer for about 10 minutes. Dice the dried fruit, add it to the rice, and cook for about another 5 minutes. Once the rice is cooked, season with cinnamon, salt, and pepper. Roughly chop the nuts and coriander and fold in. Serve with a cold yogurt sauce and lamb.
