Mario's Greek-style rice

Ingredients for 4 servings:

  • 250 g rice
  • 1 onion(s)
  • 2 garlic cloves
  • 1 bell pepper(s), red
  • 40 g olive oil
  • 150 g Ajvar, mild or hot, to taste
  • 1 ½ tbsp tomato paste
  • 500 g water
  • 3 tsp vegetable stock powder
  • 2 tsp paprika powder, sweet or hot, to taste
  • Salt and pepper, freshly ground
  • ½ tsp oregano
  • a few stalks of parsley, flat
  • 150 g peas, frozen

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

vegan, goes well with Greek food

Wash the rice and parsley. Crush the garlic cloves. Finely chop the onion, parsley, and bell pepper. Heat the water, then add all ingredients except the peas to the pot along with the rice and simmer for 15 minutes, stirring occasionally. Add the peas and simmer for another 10 minutes, stirring occasionally. This dish goes well with all Greek and Mediterranean dishes.
