Honey – Tarragon – Carrots

Ingredients for 4 servings:

  • 1 kg carrot(s)
  • 3 tbsp olive oil
  • 4 tbsp honey
  • 2 tbsp tarragon, fresh, chopped
  • some lemon juice
  • Salt

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

great as antipasti, e.g. for grilling

Peel the carrots, quarter them, and cut them into approximately 5 cm long pieces. Heat the olive oil in a large pan and sauté the carrots, covered, over medium heat for about 10 minutes (or longer or shorter, depending on how you like your carrots). Stir the honey into the still-warm carrots and let it melt. Then stir in the tarragon and lemon juice and season the carrots with a little salt. Let the mixture cool in a covered bowl and refrigerate for at least 1 hour.
