Cauliflower salad

Ingredients for 4 servings:

  • 1 cauliflower
  • 1 cup crème fraîche with herbs
  • 1 bunch chives, in rolls
  • 1 tsp white wine vinegar
  • 1 tsp sugar
  • Salt
  • possibly herbal salt
  • Pepper, freshly ground black

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Trim the cauliflower, cook it “al dente,” let it cool, and then cut it into florets while still lukewarm. Make a marinade with the remaining ingredients (except the chives) and let the cauliflower marinate for about 2 hours. Sprinkle with the chives before serving.
