Ingredients for 1 servings:

  • 50 g quinoa
  • 1 pinch of salt
  • 200 g fruit, e.g. strawberries, mango, blueberries, prepared and weighed
  • 2 tbsp orange juice
  • 1 tbsp lime juice
  • 1 tsp agave syrup, more to taste
  • ½ tsp mint leaves, finely chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

with roasted quinoa

Place the quinoa in a sieve, rinse thoroughly with hot water to remove any bitterness, and drain well. Toast in a dry pan, stirring constantly, until golden brown. Add 100 ml of water, add a pinch of salt, and cook for about ten minutes. Toasting will reduce the cooking time; taste occasionally. Transfer the quinoa to a bowl and let cool to room temperature. Make a dressing with the lime and orange juices, agave syrup, and mint. Mix the chopped fruit with the quinoa and dressing, and season to taste.
