Pan-fried French fries

Ingredients for 2 servings:

  • 700 g potato(s), waxy
  • 5 tbsp olive oil
  • 5 tbsp sunflower oil
  • Salt and pepper from the mill

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Peel the potatoes and cut into very large sticks. Do not wash them. It’s worth using large potatoes here, as this is the closest thing to Belgian fries. Heat the oil in a pan, add the unwashed potato sticks, and fry over high heat. Wait a moment before shaking, so nothing sticks. Then shake and toss once, reduce the heat to medium, and fry for about 10 minutes. Shake and toss once more. Then increase the heat back to full blast, fry, shake, and toss until the sticks look like fries. Caution: Only add salt once the fries are on the plate. Add pepper as well. 10 tablespoons of oil sounds like a lot, but most of it stays in the pan. And you get really crispy fries that are very similar to Belgian fries, and with much less fat.
