Garlic French Fries, Madeira Style

Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 3 tbsp olive oil
  • 1 tsp sea salt, coarse
  • n. B. Pepper, freshly ground
  • 2 tbsp, heaped parsley, fresh, chopped
  • 4 garlic cloves, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Garlic fries

Preheat the oven to 230°C (450°F). Grease a baking pan with cooking spray or line it with parchment paper. Toss the potatoes with 2 1/2 tablespoons of oil in a large bowl and season with salt and pepper. Spread a layer on the baking sheet. Roast the potatoes for about 30-40 minutes, until browned and cooked through, turning occasionally. Then increase the temperature to 260°C (500°F). Grill the fries for about 5 minutes more, until they begin to turn dark brown in spots. In a large bowl, combine the remaining 1/2 tablespoon of oil, the garlic, and the parsley. Add the hot fries, season with salt and pepper, and toss well.
